Mosaic Golf Day Clinic

When: Sunday, March 27, 1 - 4 pm.

What: A Golf learning experience with a PGA teaching pro who will give a 1-hour full swing lesson on the driving range, a 1-hour short game lesson (chipping and putting) followed by a chance to take it on the golf course and put your new skills into action. We will meet at the driving range and begin the lessons at 1 pm. No golfing experience is required as the lessons are designed to teach beginners the basic fundamentals of the game. Refreshments will be served.

Where: Orangebrook Golf and Country Club (400 Entrada Drive, Hollywood, FL, 954-967-4653). From I-95 exit at Hollywood Blvd. Go west one mile to Entrada Drive and turn left. Travel a quarter mile and turn right into the parking lot. From the Turnpike, exit at Hollywood Blvd. Head East towards I-95. After passing Park Road, turn right to Entrada Drive. Travel a quarter mile and turn right into the parking lot.

Bring: Bring sunscreen, hat, and sunglasses. Dress is casual (shorts and sneakers). All clubs and balls will be provided.

Cost: $33 for Mosaic Members and $38 for Non-members. This lesson would cost over $180 if you wanted a private lesson with a teaching pro.

Campout at Tomoka State Park

When: Friday, Saturday, & Sunday, April 1 – 3, 2011. Friday night dinner will be served around 7:00 pm. If you arrive after 9:00 pm on Friday, you're on your own for dinner

What: The best way to welcome spring is to camp out at Tomoka State Park -- voted among the 25 Best Spring Campout Locations in America by Camping Life magazine (the only one in Florida that made the list). Here is a taste of "real Florida" right in our back yard, with a variety of wildlife habitats and endangered species. Tomoka State Park (pronounced Toe-mocha) has many options and is close to the beach. Two organized activities for the group will be hiking along the half-mile trail once inhabited by Timucuan Indians, and observing bird (160 species) and marine life while canoeing along the Tomoka river and its surrounding creeks (canoe and kayak rentals are available). You may bring your bike if you'd like to ride; there are no rentals available at the park. There are bathrooms and outdoor showers near the campsite. If you want indoor showers, they are located by the front of the park – a short car ride away. Park website: http://www.floridastateparks.org/tomoka

Where: Tomoka State Park (386-676-4050) is located three miles north of Ormond Beach. We reserved Tomoka's Group Campsite. The park is 10 minutes from the beach and 15 from the nightlife of Daytona Beach for those who tire of roughing it.

Cost: $55 Mosaic members, $60 non-members. Price includes all meals from friday dinner to sunday breakfast. NEW FEATURE: Option to pay through Club Express with a credit card. Bring: Tent, sleeping bag, pillow, towel, hiking boots or sneakers, hat, water bottle, bug spray, rain poncho, flashlight, bike if you choose, and clothing as desired. Mosaic has tents that you can borrow if you need one (please let us know so we can reserve one for you.)

Directions: Take I-95 North towards Daytona Beach. Take the SR-40 exit, EXIT 268, toward Ormond Beach. Turn RIGHT onto W. Granada Blvd (heading east). Travel 4 miles. Turn LEFT onto North Beach Street (the turn is right before a large bridge). Travel 4 miles. The park entrance is off of North Beach Street. If you want to take the turnpike, cross over to I-95 in Fort Pierce (at Okeechobee Road, exit 152).

"Guided Tour of Loxahatchee National Wildlife Refuge"

Mosaic is your club, and we heard you loud and clear. The young adults in our group occasionally want to organize events just for their age group, ages 21 to 39. Their kickoff event will be held this Sunday, March 27, at the Loxahatchee National Wildlife Refuge in Delray Beach. Please spread the word.

If you are into outdoor adventures and fall into this age range, please join us for our kickoff event. Your participation will help this group to grow, will be the best way for you to participate with people your own age, and will give you the opportunity to guide the future of this group.

Further, if you know someone else in this age range who may be interested, please forward them this email. Do you have a child, cousin, or friend who is age 21 to 39? Introduce them to Mosaic, and soon they will be camping, biking, running, playing sports, hiking, boating, and more, all with other Jewish people their age, before they know it. Since the inception of our club in 1993, Mosaic has been responsible for over 30 marriages, resulting from people meeting at Mosaic events.

We hope the turnout for this event will be HUGE! We have spread the word throughout the South Florida Young Jewish Professional community, and notified most groups including the Tribe, Friends of the IDF, Temple and JCC Young Adult Divisions, and more! Invite your friends. The more the merrier.

Description

Andrea Friedman and Lewis Groner will co-lead this hike of about 7.5 miles round trip with 2100 feet elevation gain. It includes some breathtaking up-close views of the shear rock faces of Boney Mountain. At a stunning overlook of Boney Mountain, you will see a bench-like rock on the trail with an unforgettable view of the rock faces, as well as views of the Oxnard Plain and Thousand Oaks. The last section of trail is very steep and it is not maintained. Poles would be very useful for the way down, but not a must.

What to bring

2 to 3 liters of water, lunch, snacks, hat, sunglasses, sunscreen, hiking boots, day-pack, warm jacket, long pants, long sleeved shirt (shorts and T shirt in warm weather). Clothes should be loose fitting, and light-colors are preferable.

Robertson and Venice Blvd Carpool: 8:15 A.M.

Meet at the western side of the parking lot of Albertson's supermarket, located on Venice Blvd, near Robertson Blvd (there is also an Office Max and a Starbucks Coffee in the same shopping center). Park on the side street (Durango Ave) next to the parking lot. This location is right next to the Robertson's Blvd exit off of the 10 freeway. Not only is this one of the most strenuous hikes in Georgia, but it's also one of the most scenic. We start out at Unicoi Gap on the Appalachian Trail, and right from the get-go, we'll have an 1168-foot climb in 1.3 miles to the summit of the first mountain. We follow the AT downhill 1000 feet, then climb another 1300 feet in 2.7 miles to the top of our second mountain and lunch destination, Tray Mountain, where we'll have a 360-degree view of the north Georgia mountains. On a clear day, we may be able to see Stone Mountain and the skyscrapers of Atlanta with the naked eye.

This is one-half of the strenuous hike that Bob's group will be ?doing today, so it's attainable for those who want to enjoy the view ?but not have to work so hard to get there. ??THe hike will start at Indian Grave Gap? on the AT, where we will climb 1300 feet over 2.7 miles to the top of?Tray Mountain to eat lunch and have the same 360-degree view. ?(Good chance that Bob and hIs group will be arriving at the ?lunch spot to join us.) The climb can be strenuous in some spots, but it's all downhill on ?the way back.?? Round trip up and back distance is 5.4 miles. ??

This Weekend With Mosaic!!

Loxahatchee River Down & Back Canoe Trip
When: Sunday, November 14, 9:00 am at the carpool site or 10:00 am at the put-in site. Please use the restroom before parking at the put-in site (see "Directions" below). We should be back at the outfitter by about 4:00 pm
What: This is Mosaic's favorite canoe trip, only with a slightly different twist this year. For the first time ever, we will be paddling for three hours downstream, then stopping for lunch along the river bank, and then paddling back up to the outfitter. The Loxahatchee River is the only river in Florida designated as "wild and scenic" by the U.S. Government. This trip will focus on the narrow section of the river, bounded by oak trees and sable palms. The wildlife abounds, and the canoeing is fairly technical, but doesn't require much exertion. We'll start out with a brief canoe lesson, and then hit the river. After canoeing for about two hours, we'll stop for a picnic lunch on the riverbank near Governor's Dock, before turning upstream for the three-hour paddle back to the outfitter. Doing the trip this way means that we don't need to wait for the shuttle bus at the end, nor spend another half hour on the bus. In addition, the canoes are half the cost of going to Jonathan Dickenson and getting shuttled back, and we get to experience the nicest part of the river twice! This is the way most people do this trip, and there are good places for lunch and porta-potties along the river. Join us afterward for a well-deserved dinner at a nearby restaurant.
Where: Canoe Outfitters at Riverbend Park, 561-746-7053
Directions: Take the Turnpike north to exit 116 west, or I-95 north to exit 87 B. Go west on Route 706 for approximately 1-1/4 miles. You will see a small brown sign in the median strip, and Canoe Outfitters will be on the left. That is where the canoe office, port-o-lets, and put-in site are now. Please use the bathroom before you park at the put-in site if possible, since there will be no other good opportunity till lunch. There is a bathroom at the McDonald's on Route 706 east of the Turnpike or at the Starvin' Marvin's convenience store a few blocks west of the put-in site
Carpool Site: Meet at the Wyndham Garden Hotel just west of I-95 on Glades Road (not the one on Sheridan!). Take I-95 to Glades Road (Exit #45) in Boca Raton, and go west. Go under I-95, and make the first U-turn, to come back east on Glades. The Holiday Inn will be on the right, just before you get to I-95. Meet in the parking lot at 9:00 am. We will leave at 9:15 am sharp!
Bring: Sunscreen, hat, picnic lunch, snacks, lots of water, insect repellent, dry bag if you have one, and change of clothes for dinner.
Cost: $16 for Mosaic Members and $21 for non-members. Cost includes canoe rental, park fees, and taxes.

High/Low Ropes Course & Team Building Adventure at FAU in Boca Raton
When: Sunday, November 21, 10:00 am to 2:00 pm
What: You've heard the buzz about team building ropes courses. Mosaic is sponsoring a day in the outdoors on platforms, planks, rock walls, rope ladders, playing games, brain teasers, and problem solving in the spirit of team building. Enjoy a mix of low and high ropes elements. Challenge your fears, improve your leadership skills, and have fun solving problems. Not only is this program fun and exciting, but it will build skills which prove valuable both at work and at play. I've done this course a few times and it always leaves me with a new, positive perspective and thoughts to ponder. Anyone 8-65 years old can participate. High elements will make up 1/3 of the events.
Where: The FAU Boca Raton Campus, three blocks north of the University Center on the west end of campus.
Directions: Take I-95 to Glades Road in Boca Raton. Go east several blocks and make a left at the Fresh Market, into the FAU campus. Follow the signs to the University Center, then continue three more blocks to the climbing wall.
RSVP: Registration deadline is November 10. After November 10, add $5.
Bring: Hat, sunscreen, sneakers, water bottle, a sense of adventure, and $6.50 for lunch.
Cost: $40 for Mosaic members, $45 for non-members. Cost includes four hours on the ropes course, with an hour break for lunch. Add $5 if reserving after November 10. Cost does not include lunch, which is $8.00 for an extensive all-you-can-eat buffet brunch in the student cafeteria.

STEPPIN' OUT ADVENTURES: UPDATES AND REMINDERS

This is the Chicago version, if you live in another city, please let us know..

we have special newsletters with local events for other cities.

We often send updates to our monthly newsletter. We've been getting a lot of questions about which trips are Steppin' Out only trips and which are collaborative efforts.
This year Steppin' Out launched Do Good Adventures and part of our focus will be to work with individuals and custom groups/organizations who want an adventure and/or an adventure that includes Service/Volunteer components. Some of our Steppin' Out trips will include the service component, but most of those trips are focused on activity, culture and camaraderie We will be offering approximately 6 a year. But we still want to be a valuable resource to you and we have made arrangement with our outfitters to be a part of some of their trips.

We are still working on the second half of 2011- but for the first half the Steppin' Out trips include Belize, Tanzania, The two Ski trips, & Morocco in the Spring.

The others we are either promoting or sending a group to be a part of another group. There are certain trips where Steppin' Outers comprise much of the group.

Thailand- Hike, Bike and Raft: This trip has all the elements of a trip if we were putting it together ourselves. It's active, basic accommodations but you see the areas that we would do. We hope to make this a Steppin' Out departure one day. More info here

Morocco in May and the Festival of Roses

From the colourful, chaotic medinas to the moody desert landscape, Morocco is a land filled with wonder and rich culture. It is extremely friendly, even in the markets there is little hassling. While of course we have to be beguiled by the lively souqs and tumultuous market squares of Marrakech, we spend more time out of the cities and off the beaten track villages. We'll leap into this land of extraordinary beauty on atwelve -day adventure through crisp mountain scenery, spectacular sheer gorges and picturesque towns, exhilarated by cycling trips, mule treks and canyon explorations, and touched by the warm hospitality of Moroccan villagers and nomads. We should be in the small towns during the Rose Festival which is supposed to be spectacular. Plod through the Sahara in a camel convoy, and camping under the stars. We'll shoot for the Pumpkinvine Trestle (milepost 23.02) from the start at Floyd Road (milepost 4.2). Doing the math, that makes close enough to 39 miles to qualify. Assuming the weather cooperates, this time of year should be both scenic and invigorating

Each year, our leader Hank has been trying to add a mile for each year on earth. Last year though, only two of us made the Route 66 sixty plus mile run. So this year, rather than a 67 mile trek, we will do one commemorating the proverbial age of 39 only - that should open the field to many more folks who have attained chronological perpetuity! No excuses!

Description

Lew Groner will lead this hike of about 7 miles, 1800 feet elevation gain round trip on the famous Mount Wilson trail to Orchard
Camp. We will have lunch by the creek, under a 1500-year-old oak tree, and return the same way. About 1/2 of the trail is shaded.

What to bring

Two liters of water, lunch, snacks, hat, sunglasses, sunscreen, hiking boots or shoes with good traction, daypack, long pants and
long sleeved shirt or shorts and a T-shirt, depending on weather. A jacket and gloves in cool weather. Clothes should be loose
fitting, and light-colors are preferable.

Fwy 10E to 110N to end of freeway, which turns into Arroyo Secco pkwy, to California Blvd. Left to Pasadena Avenue. Right to
freeway 210E to Baldwin Avenue exit. Left (under the freeway) on Baldwin to Foothill Blvd. Left on Foothill Blvd one block. Right

Key Biscayne Kayak Adventure
When: Sunday, September 19, 9:15 am at the Visitor's Center, or 8:30 am at the carpool site.
What: A naturalist will take us on a journey along the shores of a land that has witnessed the comings and goings of man for over 2000 years, from the Tequesta Indians that set-up their fishing villages in the summer to the pirates that shipwrecked off shore. This island paradise sits nestled among Miami's hustle and bustle, providing a playground for the weekend warriors but also providing a refuge for those seeking peace amongst the natural beauty of this barrier island. This tour explores the natural shorelines of a Key Biscayne where coastal birds and marine life are aplenty. The event will end at around 1 PM. We can either go out to lunch or hang out at a near by beach for the rest of the afternoon.
Where: Crandon Park Visitors and Nature Center (North Beach Parking Lot # 2), 6767 Crandon Blvd, Key Biscayne, FL 33149. Phone: (305) 361-6767.
Directions to the event site: From I-95 take exit 1A toward the Rickenbacker Causeway/Key Biscayne. Continue onto FL-913 S/Rickenbacker Causewary. Proceed over 2 bridges. You are now on Crandon Boulevard and need to be in the left lane. Continue on the Boulevard about 1/4 mile. On your left side directly across from the Golf Course is a green/white sign that reads Crandon Park NORTH BEACH. Make a left turn into Crandon Park Entrance and Parking Lot #2. Follow the road around the ball field to the north end of the parking lot to the Nature Center. You will see a covered portico with a sidewalk leading to the 2-story Nature Center (silver roof)
Carpool Site: Meet at the Holiday Inn in Hollywood. Take I 95 to Sheridan Street (exit #21), go west on Sheridan to the first light (N. 29 Ave.), turn right (north) and make the first left into the Holiday Inn. Meet in the parking lot on the right side of the hotel as you're facing the hotel. Meet at 8:30 am. We will depart at 8:45 am sharp! Please be on time to be considerate to others.
Bring: Snacks for during the paddle (there are no food options inside the park), plenty of WATER (at least 2 quarts per person), SUNSCREEN (protection from the sun including sun block with a high SPF 15 or higher), CLOSED TOE SHOES required (Keens are good, NO FLIP FLOPS!), bathing suit, towel, change of clothes, and money if we decide to go out to eat afterwards. Hats and sunglasses are recommended.
Cost: $30 for Mosaic members, $35 for Non-Members. If paying by cash, PLEASE BRING EXACT CHANGE! If paying by check, make your check out to "Mosaic" in the exact amount. Payment is by Cash or Check ONLY!

Naples Tennis Weekend
When: Friday, September 24 to Sunday, September 26. People generally start arriving around 5:00 pm on Friday and leave any time on Sunday.
What: We're finally going back to Naples for a weekend of tennis! This time we are returning to the beautiful Naples Bath and Tennis Center. The center has condos of varying sizes, with full kitchens and laundry facilities. All rooming arrangements will be assigned based on a first-come, first-served basis. Even if you don't play tennis, there are lots of great things to do at the resort and throughout Naples. There is no official dinner planned for Friday evening. Some people choose to have dinner after tennis around 8:00-9:00, while others have a light meal before tennis. We generally get together around 10:00 pm on Friday to meet and greet and play some games. Saturday tennis will begin at 9:00 am with a one hour Round Robin led by Erin Negrea. We will have access to the courts for most of the morning as well as afternoon. There is also the option of poolside fun and/or the beach, with tennis again around 5:00 pm. We will plan dinner out on Saturday night as a group. Sunday morning we will have our final tennis matches.
Where: Naples Bath & Tennis Club, 4995 Airport Pulling Rd, Naples, FL, 1-800-225-9692.
Directions: I-75 to Naples Exit #107 (Pine Ridge Rd.) Make a left (west) to Airport Pulling Rd., and turn left (south) to the second light. Turn right at Clubhouse Drive, and into the Naples Bath & Tennis Club. Go straight, and the clubhouse will be two blocks down on the right. Pick up your registration packets and keys at the office in the clubhouse if you arrive before 5:00 pm. Drive time from Ft. Lauderdale is less than two hours.
Carpool Site: We do not have an official carpool site for this event, as people tend to leave at different times. We can recommend a convenient meeting place at the Wellesley Inn near I-75 & I-595, right next to the Baymont Inn. Take I-595 west to exit #1 (S.W. 136 Ave.) Turn right (north) on 136 Ave, and the hotel will be on the left. The signage is bad, and it is set back from the road. If you reach the gas station or the Baymont Inn, you have passed it.
Bring: Whatever you need for the weekend, tennis gear (proper attire is required for the courts; no tank tops for men or halters for women. Court shoes are required for clay courts), bathing suit, beach gear if you want to go to the beach, games for the night owls, and shoes if you think you might want to go dancing Saturday night (some places don't allow sneakers). Tennis balls are provided.
Cost: The following pricing is for Mosaic Members. Non-Members add $5. Cost is $85 per person, for two people sharing a bedroom in a 2 or 3 bedroom condo. There is one 1-bedroom condo available with one full size bed, which is available for a cost of $100 per person for 2 people. There are two condos, which have pullout sofa beds in the living room. The sofa beds are available for $70 per person for the weekend. Due to limited availability of condos, everyone must share a room (many rooms have twin beds). We will try to honor requests for accommodations, but all rooms and requests will be first come first served. The price for the weekend includes accommodations Friday and Saturday nights, full use of all tennis facilities as well as swimming pool and Jacuzzi, a light bagel breakfast Saturday and Sunday mornings and some evening snacks. All prices are subject to availability, and rooming assignments will be made on a first-come, first-served basis.

Join us for a Catamaran ride on the Spirit of Lauderdale. We set sail up the intercoastal waters into the Atlantic Ocean.

Teams Up with Glenmorangie Distillery

The Kosher Wine Society is pairing up with Scotland's famous Glenmorangie Distillery. Through shelf talkers at liquor stores, discount coupons for members and website advertisement, the Kosher Wine Society will be working to bring Glenmorangie's exceptional single malt whiskeys to the attention of the American Jewish Community. Glenmorangie's long history and the quality of its traditional manufacturing process along with pure waters, extraordinary stills, fine casks, continued innovation and attention to detail make it a distillery whose products we are proud to endorse.

Glenmorangie, located in Tain, Ross-shire, Scotland, is one of the first licensed distilleries in the Highlands. In 1843, founder William Matheison along with a team of experts known as "the sixteen men of Tain," began producing a high-quality range of single-malt whiskey. The tradition continues today. With a staff of just 16, Glenmorangie has been producing the best selling single malt in the UK.

The key ingredient in any malt whisky is the water that goes into it. Glenmorangie's water comes from the Tarlogie Springs, located about a mile above the distillery. Waters that fall as rain on the Hill of Tain filter down through lime and sandstone rocks, gathering minerals on the way, and rise again at Tarlogie, taking up to a hundred years to emerge. This precious water was in recent years threatened by the possibility of land development. To insure the quantity and quality of water needed for the distillation process Glenmorangie purchased Tarlogie Springs and some 650 acres surrounding it.

The Glenmorangie stills have the tallest columns of any in Scotland, standing 26 ft 3 in, with 10 feet 1.25 inch necks. This is especially significant because this mean only the lightest and purest vapors can ascend and condense into spirit. Glenmorangie's distilling methods retain less than a third of the second distillate for maturation. The rest is returned to the still for further refinement.

Glenmorangie controls the quality of its casks as well. All of its products are matured in white oak casks that are manufactured from trees grown in Glenmorangie's own forest in the Ozark Mountains of Missouri. After being left to air for 2 years, the new casks are leased for 4 years to distilleries for use in maturing bourbon. Glenmorangie then reclaims the casks and uses them to mature their single-malt whiskeys.

Glenmorangie distills a wide selection of products, all with their own singular flavors and character. Which of these can be qualified as kosher is a matter of opinion. Glenmorangie's "Original" range of whiskeys is matured entirely in casks that were first used for bourbon and are therefore indisputably kosher. The "Extra Matured" range is transferred into casks that were previously used for other spirits such as wine, port or sherry in a process called finishing.

Whiskey that has been matured or finished in casks that formerly contained sherry or other wine products has been a subject of debate among rabbis. Because grape juice and wine are traditionally sacramental items, Jewish law requires that they be made in a controlled kosher fashion. All kosher wine and grape juice manufacturing requires the direct involvement of trained rabbis. The question is whether sherry in the wood of the cask, not having been produced as a kosher wine, retains enough of its character as wine that its presence in the cask will render the whisky not acceptable by kosher standards.

On this issue there exists more than one school of thought and more than one answer. Consult your local rabbi if you have questions regarding the kosher status of any scotch.

After investigating the opinion of many organizations that issue kosher certificates, the Kosher Wine Society has added their endorsement to Glenmorangie Original, 10 years old, Glenmorangie Astar and Glenmorangie 18 years old. EXCITING TASTES FROM THE GALILEE

An Evening With Tal Cohen - Tabor Winery

On June 3, 2010 - in the Penthouse of the Roger Smith Hotel - guests of the Kosher Wine Society welcomed Tal Cohen, United States' representative of Israel's Tabor Winery located near the historic vineyards of Kfar Tabor in the lower Galilee. Tabor Winery produces an innovative and ever evolving collection of the highest quality wines made from grapes grown in four different soil types occurring side by side in the landscape; Terra Rosa, Chalk, Clay and Volcanic.

For more than 120 years, the vineyards of Kfar Tabor have been supplying grapes for Israel's leading wineries. In 1997 four families, Sela, Korman, Pelag and Ben Tanhum set up a boutique winery with each family overseeing a different facet of administration. Together they contribute four hundred years of accumulated agricultural experience, endowing the young winery with qualities rooted in longstanding tradition and know-how.

Chief winemaker Arye Nesher, a Russian wine expert who immigrated to Israel in 1990, holds to a Terroire world-view. He invests the better part of his time creating the most advantageous environment for the vineyard - personally taking charge of growing methods. He believes that while ninety percent of a wine's quality is determined by the vine's growing time and location in the vineyard, a mere ten percent by the production process. The astute choice of grape varieties and soils, the close proximity of the vineyards to the winery and carefully controlled conditions of winemaking combine to give Tabor wines their unique and refined taste.

Kosher Wine Society guests sampled wines from three of Tabor's series:

Galil
Tabor's youngest wines, made from a combination of grapes grown in all soils. The winemaker calls these "happy" wines. Easy drinking, fresh and crisp, slightly bubbly on the tongue, Galil wines make excellent choices for those who are new to the world of wine. The Galil series is not oaked, but rather aged for four months in stainless steel, and should be chilled before drinking. Guests tasted four varieties: Tabor Galil Chardonnay 2009, Galil Sauvignon Blanc 2009, Galil Merlot 2007 and Galil Cabernet Sauvignon 2007.

Adama - The "Soil" Series
To create this series the winemaker separated grapes grown in the different soils to create wines whose aromas, flavors and finish strongly reflect the qualities of each particular soil. Wines from grapes grown in chalk soil are earthy and minerally. Wines from grapes grown in volcanic soil have a very strong nose with vanilla and fruit flavors. Volcanic soil is very hard and rocky, so the roots of the grapevines must grow very far down in search of water. Because of this, the grapes produce wines that are very complex and with a strong presence. Terra Rosa soil is soft and dark red in color, and the Terra Rosa wines all carry this depth of color.

Adama wines are more sophisticated than the Galil and should be consumed at room temperature. Aged for twelve months in French or American Oak, they are richer with more body and complexity and appeal to the more experienced wine drinker. Because they are very unique in palette and nose, many "only Merlot" drinkers enjoy the Adama Cabernet, and many Cabernet drinkers enjoy the Adama Merlot. Sommeliers in a blind sampling could not determine which kind of wine they had tasted.

Participants tasted Tabor Adama Chalk Soil Sauvignon Blanc 2009, Adama Chalk Soil Merlot 2006, Adama Volcanic Soil Cabernet Sauvignon 2007 and Adama Terra Rosa Cabernet Sauvignon 2006.

Mes'cha
This is Tabor's top-of-the-line label and the winemaker's most personal creation. He uses a blend of Cabernet Sauvignon, Merlot and Shiraz grapes grown in each of the soils and ages the wine for eighteen months in French Oak. Due to selective hand harvesting and exacting standards of perfection, only a small quantity of this wine is produced yearly. In fact, at the discretion of the winemaker, there are some years in which this wine is not released for sale at all. The vintage guests tasted this evening was Tabor Mes'cha Cab-Merlot-Shiraz 2005.

As an added treat, Tal Cohen introduced samples from Tabor's new Plinim "Pearls" line, currently being sold only in Israel. These are delicate sparking wines that are lovely to drink on their own and make wonderfully refreshing Sangria.

The highly distinctive qualities of each wine and wine series sparked lively interest and discussion. Guests spontaneously compared their findings among themselves and directed many questions to Tal Cohen. The event, structured as a formal sit-down wine tasting and lecture, went beyond any "educational formula for polite listening."

In the most positive sense, the guests broke the boundaries of this both pleasurable and informative wine tasting, and took on learning for themselves with laughter, commentary and enthusiastic participation. The evening gave guests much to think about in terms of soil types, winemaking techniques and the beautiful landscape of the Galilee. It also opened the door for them to explore a wide range of aromas, tastes and textures.

WINE OF THE MONTH PINOT GRIS

Our choice for August is Pinot Gris, a potentially richer and more complex white to go with the rich late summer colors and the rusts and golds of autumn.

Pino Gris is a white wine grape of the species Vitis vinifera and is thought to be a mutant clone of the Pinot noir grape. It's name "gris" meaning grey in French refers to its normally grayish-blue fruit. Often however, even within the same cluster, the ripe grapes can vary in color from black to deep golden yellow and copper to light shades of pink and even white.

The traditional base of Pino Gris is Alsace, France where it is called tokay d'Alsace. The grapes are also grown in Hungary, New Zealand, and Tasmania. Growers in northeastern Italy call the same grape Pino Grigio. Pino Gris is also are now being grown quite successfully in Oregon where many wineries are moving steadily away from making Chardonnay while increasing production of Pinot Gris.

Depending on the attention to ripeness at harvest and techniques of vinification, Pinot Gris can create very different wines, from tangy and light and even bland and vapid, to rich, round and full-bodied. Pinot Gris is usually delicately fragrant and mildly floral with lightly lemon-citrus flavors along with melon, apple and pear. It can also show components of vanilla, sweet wood, almond, spice and honey on the palate. Its color is a pale yellow with hints of gold and its texture is notably silky and smooth.

Food Pairings

Pinot Grigio pairs nicely with light pastas, goat cheese and cheese/cracker combinations. It also matches well with vegetable salads, salmon or Arctic Char, fried fish, white fish, chicken and turkey. Because this wine is fairly acidic, avoid pairing it with foods that have high acid contents such as citrus fruits or tomato-based dishes.

Hike the Florida Trail (Everglades Northern Big Cypress Section: Nobel's Grade)

When: Sunday, April 25, 11:15 am at Broward carpool site, or 12:00 noon at the rest area.

What: Let's explore some old Florida wilderness, less than an hour from Ft. Lauderdale! We'll start the day at a rest stop for a picnic lunch, so we get a chance to meet each other and use the bathrooms. From there we'll walk to the trailhead on the north side of I-75. This section of the Big Cypress is striking, with stunning flora and fauna at every bend. Some of these areas are under water during the rainy season, and this time of year it is usually totally dry, but we can't be sure. No matter what, wildlife abounds this time of year. This is the first time Mosaic has explored this part of the Florida Trail. Winter is the most popular time to hike here, when rainfall is low, bugs are inactive, and migratory wildlife is abundant. Parts may be under water, but that just adds to the adventure. We will do a limited amount of off-trail exploring as well. Expect to walk a total of between three and five miles, depending on conditions. This is an area that you don't generally get to experience, so join us for some fun and adventure! We will start the hike promptly at 1:00, and plan to return to the trailhead by 6:00 pm.

Directions to the Rest Area / Trail Head: Meet at the rest stop at about mile marker #63 off I-75 at 12:00 noon. DON'T MISS THAT EXIT, or the next turn-around is 17 miles! To get there, take I-595 west to I-75 north (towards Naples). You want to exit at the large rest area after mile marker #62. When you see marker #62 SLOW DOWN, and follow the signs to the rest area. After you exit on the right side, go under the highway, and turn into the rest area. Meet at a picnic table in the east end of the rest area.

Carpool Site: Meet at the La Quinta Inn, 13651 N.W. 2 St., Sunrise, behind the Shell gas station. Take I-595 west to S.W. 136 Ave. (exit #1). Go north (right) on 136 Ave, turn left on N.W. 2 St. and the hotel will be immediately on your right. Be careful, it's hard to see the hotel from 136 Ave. Or from the Sawgrass Expressway, exit Sunrise Blvd., go east to 136 Ave. turn right to N.W. 2 St. and turn right. The hotel will be immediately on your right. Meet at 11:15 am. We'll leave at 11:30 am. sharp!

Bring: Long pants and long sleeve shirt, bug spray, hat, raingear, picnic lunch to eat at the rest stop, water bottles (at least two liters for each person in your party), snacks, fanny pack or backpack, and hiking boots or sneakers. Also bring a change of clothes for afterwards.

Cost: $4 for Mosaic members, $9 for non-members. Cost includes trail mix and light snacks.

Tampa Animal & Art Adventure Weekend

When: Friday, April 2 – Sunday, April 4, 2010. Arrive any time after 4 p.m. to check in at the hotel. Email the event leader to coordinate car pools if desired.

What: Join us for a fun-filled weekend in Tampa, FL. The main events include a visit to Tampa’s unique Big Cat Rescue (BCR)** children must be 10 or older**, Lowry Park Zoo, Bern’s Steakhouse, and Dali Museum in St. Petersburg.

Big Cat Rescue – Non-profit sanctuary devoted to rescuing and providing a permanent home for exotic wild cats (including tigers, lions, ligers, leopards, cougars, bobcats, lynx, ocelots, servals, caracals and others, many of whom are threatened, endangered, or now extinct in the wild)

The Lowry Park Zoo – 46 acres of lush natural habitats comprising six main exhibit areas and 2000 animals. Voted #1 zoo in the U.S.

Bring: Comfortable clothes and walking shoes for the weekend, rain gear in case (no umbrellas allowed in BCR), bug spray, water. Business casual/semi-formal for Bern's Steak House (strict dress code).

Cost: $120 Mosaic members and $125 non-members. The RSVP cost includes ONLY the group rate discount for the hotel (2 nights, including all taxes & continental breakfast). This is for one person per room. If you want to share the room and pay half, find a buddy or contact the trip leader to match you up! You are required to RSVP to trip leader to reserve the hotel room before March 22.

Additional Costs: BCR = $25, Lowry Park Zoo = $21 (discounts for children and seniors), Dali Museum = $17 (discounts for seniors and children). Bern’s Steak House and all meals except breakfast are paid separately on your own. Entrees at Bern’s to be from $30 and up. Kosher and vegetarian dishes available.

Campout, Kayaking, Canoeing & Naples Zoo at Collier-Seminole State Park
When: Friday, March 19 - Sunday March 21. Meet at the campsites any time after 3 p.m.

What: Enjoy a relaxing weekend of camping at South Florida's beautiful Collier-Seminal State Park,
www.floridastateparks.org/collier-seminole. Start the weekend with our Shabbat Dinner to be served about 7 p.m. and then relax
around the fire until late in the evening. On Saturday we are planning a day trip to the Naples Zoo www.napleszoo.com and on
Sunday, after we pack up, those who want to will travel a short 20-30 minute commute for a day of kayaking and canoeing at Isle of
Capri, behind the Capri Fish House www.caprifishhouse.com, before we head home. This will also be offered to non-camping Mosaic
members and non-members as a day trip. The zoo and kayaking are optional events with additional fees or you may choose to remain at
camp and have ample time to relax, read a good book or catch up on some sleep. There are also canoe rentals at the park for
Saturday.
Where: We'll be camping in sites 70-76 of Collier-Seminole State Park, 20200 E. Tamiami Trail (Hwy. 41), Naples, 239-394-3397. No
more than 90 minutes from Miami or Lauderdale.

Directions to Campsite / Carpooling: From Broward, take I-75 North (Alligator Alley) to Exit 80 (SR 29) and head south for about 18
miles to Hwy 41 (Tamiami Trail); turn right and continue another 15 miles to the park entrance on your left. Enter the park and
tell the ranger you are with Mosaic. If you will be arriving after sundown, call the trip leader (Daniel Fineberg @ 954-270-6995)
for the gate code to get into the park.

Carpooling: Contact trip leader who will help in arranging carpools.
Cost: Mosaic Members pay $36 per person, plus $24 per tent for the weekend. Example - If you will be the only person in your tent,
your fee will be $60, if you share your tent with one other person, your fee will be $48, etc. The tent fee ($24) is divided up
between all persons in the tent plus the $36 per person event fee. Non-members add $5. Children 5-17 pay $20. Cost is for two tents
per site and all meals from Friday dinner to Sunday breakfast.

Cultural Festival from 12 noon to 5pm which will be a half-day filled with fun and educational activities celebrating the diversity
of Jewish culture. It will include children's entertainment, hands-on crafts, food, music, singing, storytelling, outdoor
adventure, games, face-painting, Israeli dance, JCAA Danstarz, children's choirs, "Ask the Rabbi or Cantor" classes, a calligrapher,
Israeli and social action informational booths, Israeli wine-tasting, holiday and life cycle displays, a Torah scribe,
inflatables, a bazaar and culminating at 4pm with a concert by internationally acclaimed star Michelle Citrin. The event will be

Meet authors and others who have made a difference in NOLA, as well as attend a gospel choir service on Sun and a Shabbat service on Fri. There's time to explore the French quarter, enjoy live music and much more. We know that a few days is hardly enough to make a difference in such a massive disaster, but our work will be twofold. Working hand in hand with the people we are helping- will give them a sense of support and hope for a seemingly never ending task. This weekend, Mosaic Outdoor Club of Georgia will be partnering with Trees Atlanta in a community beautification program via an
event being led by our Susan Steinfeld. It will take place in the Kirkwood Neighborhood of Atlanta.

Recall that, in times of both simchah and sorrow, honor and memory, many of us have taken the initiative of donating monetarily
toward planting a tree in Israel. You have a unique opportunity to do something in Atlanta that could be considered somewhat of a
parallel. No financial obligation here, but expending an effort not so Herculean in magnitude to plant a tree will give you a big
return in pleasure, knowing that you and your buddies have helped to make Atlanta a better place.

I am sure that in your mind, you can give your special tree its own name, and periodically check on its progress as we would a dear
friend.

The event is scheduled early enough so that you will have the opportunity to relax your muscles and nourish your hunger pains at the
SuperBowl party later in the day.

Let's support Trees Atlanta (and thanks to Susan for coordinating) - we "dig" her for directing this "greening" of Atlanta event!
